Baby Spinach Salad

Ingredients                  Quantity

Baby Spinach               100 Gms

Miso Dust                      5 Gms

Grated Parmesan         15 Gms

Truffle oil                       8 Ml

Yuzu Juice                    5 Ml

Kataiffi                          5 Gms

Goma Dressing

Sesame Paste              100gms

Rice Vinegar                 100ml

Sugar                             50gms

Kikkoman soya              70ml

Salad Oil                        250ml

Instructions:

  • Take the Baby Spinach in a mixing bowl.
  • Add Miso Dust and toss it gently.
  • Then add some truffle oil, Yuzu Juice & grated Parmesan cheese.
  • Transfer the tossed salad on a plate & add Kataiffi.
  • Finish with grated Parmesan & miso dust on top.

Mix Lettuce Crispy Shitake Salad

Ingredients                  Quantity

Mix Lettuce                   100Gms

Goma Dressing             25 Gms

Truffle Oil                       10 Ml

Fries Shitake                  50 Gms

Sesame Seed Toasted   5 Gms

Goma Dressing

Sesame Paste              100gms

Rice Vinegar                 100ml

Sugar                             50gms

Kikkoman soya              70ml

Salad Oil                        250ml

Instructions:

  • Take the mix lettuce in a mixing bowl with addition of Goma dressing and tossed it gently
  • Then add some truffle oil
  • Take the tossed salad on a plate & add crispy fried shitake.
  • Now add some more Goma dressing on shitake
  • Finish with tossed sesame on top
